If Cupcakeaholics Anonymous existed, I would be going to daily meetings. I have a serious cupcake problem; I can’t stop at just one! Luckily for me, my cousin and brother were visiting this weekend, so I had a great excuse to bake without worrying about the consequences.
In honor of summer, I decided to make key-lime cupcakes with a mango key-lime frosting. I was pretty impressed with the results (and considering we had no leftovers, so were my brother and cousin!) Enjoy and let me know what y’all think!
For the Cupcakes (Note this only makes 6 cupcakes)
3/4 cup cake flour (or regular flour and 1/2 tsp baking powder and 1/4 tsp baking soda)
1/2 cup sugar
Juice from 6-7 key limes
Zest from 3 key limes
1/2 cup heavy whipping cream
Pre-heat oven to 350.
Beat egg. Add whipping cream, sugar, and water and beat (I used a whisk but you should 100% use a mixer or hand beater!!) until smooth. You want to see some air bubbles.
Sift in flour (and baking soda and powder). Beat first on low for 2 – 3 minutes and on high for 2 – 3 minutes.
Pour into lined cupcake pan and bake for 15 – 20 minutes or until toothpick comes out clean.
Let cool completely!
For the Topping
1 cup heavy whipping cream
1/4 cup powdered sugar (adjust if you like sweeter)
Juice from 6 key lime
zest from 3 key limes
1/4 cup mango juice
Add everything into mixing bowl and whip with a hand mixer until stiff.
