This is another recipe based on my time in Italy. One of the amazing things about Italy is the designer outlets. My roommate and I finally made it to The Mall (the outlets near Florence) but ended up having a lot of free time. Being food-fanatics, we decided to try the only restaurant at The Mall. Boy were we shocked! ¬†We had this AMAZING carrot walnut gnocchi that I still crave 3 years later. Here’s my take on it:

What You Need:

1 box pasta

1 cup grated Parmesan cheese

1 cup heavy cream

1/2 stick butter

1 cup walnuts (minced in the blender)

1 shallot – finely chopped

3 cloves garlic – minced

1/2 cup carrot – grated or minced

1 tbs salt (or to taste)

1/2 tbs dried parsley

The How To:

Place water to boil for pasta – add pasta when at a rolling boil

In a medium saucepan add butter (med-high heat)

When bubbly add shallot and garlic – cook until shallot is translucent

Add carrot – cook for 2 – 3 minutes

Add walnuts – cook for another couple of minutes

Add cream and mix well – let simmer until cream starts to thicken

Add salt and parsley

Mix with pasta.

Serve with a generous amount of Parmesan cheese.

***For a lighter version replace butter with olive oil and cream with 2% milk***
